Selectively Picked and 50% wild yeast fermented. Mlf in French barriques and portion in tank. High solids with bi-weekly battonage. This wine has been designed to combine complexity with the primary fruit characters of the grape. Tasting Notes: This is a very complex wine, with an impressive fruit core. Primary characters are; peach, nectarine, grapefruit peel and vanilla, layered with secondary savoury notes from yeast autolysis and a touch of hazelnut and cashew with French oak overtones on the finish. This is supported by a creamy structure and a tight fruit driven length.
